Isomalt is a sugar substitute, a type of sugar alcohol, used primarily for its sugar-like physical properties. It has only a small impact on blood sugar levels and does not promote tooth decay, i.e. is tooth-friendly. Isomalt will not caramelize when heat is applied to it like sugar does so isomalt will not yellow. This makes it a very good medium to create great design elements for cakes that need to have clear color. Gem stones, windows for gingerbread houses and glamorous sparkling mosaics are just a few elements that can be made using isomalt. Isomalt can be used to create design elements for cake decorating because it can be sculpted or molded into pretty much any shape. It is important to use molds that can withstand very high heat and avoid plastic molds that can distort or even melt. You also must take special care to work carefully and safely with this medium because you can get burned.

Add color or flavor to the melted isomalt when it cools slightly, stirring the addition in carefully until the bubbling stops.

Cool your unused cooked isomalt and store it in a sealed container with a silica gel package added in a cool dark place. Do not refrigerate or freeze.
Melt cooked, stored isomalt in the microwave on medium heat in several increments, stirring in-between. Never use high heat settings or you can burn the isomalt making it unusable

Use disposable tools when creating isomalt sculptures or transferring the melted isomalt into molds because this product can harden and be very difficult, or impossible to remove.
